Bread Care
Storage
Your bread contains no preservatives and is best eaten fresh: on the day of purchase. Your bread will, however, keep for a few days if stored appropriately, and it freezes exceptionally well should you want to keep it longer. The advice is a little different for the different types of bread, so select your bread type to navigate to the specific suggestions we have for you.
Our rustic country loaves are intended to have crusty crusts and soft, moist interiors. Storing them whole on the counter for one or two days will be fine. As soon as the bread is cut, however, it begins to harden much more rapidly. The best way to store a cut country loaf is cut-side-down on a wooden chopping board with a breathable cover, like a tea towel or a PRuK breadvelope. The loaf will keep well like this for a few days. If there is some hardening of the exposed crumb, simply slice it off and eat the next slice.
If you would like a softer crust, storing your bread in plastic containers or zip lock bags will achieve this.
If you want to store your bread for longer, we recommend freezing the bread. You can place the whole loaf in a zip lock bag or plastic wrap and freeze it. When ready to eat it, thaw it and then refresh the loaf in the oven at 350 Fahrenheit for about 20 minutes (if you spray the loaf with water before refreshing it, you will be rewarded with a beautiful crispy crust), or you can slice the loaf place the individual slices in zip lock bags or plastic wrap and freeze them. You can ten toast the individual slices of bread from frozen.

Our focaccia is intended to be crispy on the outside and soft and chewy on the inside. To enjoy focaccia at its best, we suggest that you refresh it in the oven at 350 Fahrenheit for 10 minutes before eating it.
